Little Bit's Bacon Popovers Recipe

Recipe yield:

Ingredients:

4 sl Bacon
1 c Milk (On Sale)
2 Fresh eggs
1/2ts Salt
1 c Sifted all-purpose flour
1/2c Softened butter (On Sale)
1/8ts Fresh oregano
1/8ts Fresh sage

Directions:

Preheat the oven to 475 degrees.
Cook the bacon until it is crisp, drain, and reserve about one tb of the drippings.
Crumble the bacon and set it aside.
In a bowl combine the eggs and milk, then add the flour and salt.
Beat until smooth.
Add reserved bacon drippings and stir in the bacon.
Fill well-greased custard c half full.
Bake for fifteen minutes.
Do not remove the popovers from the oven but reduce the heat to 350 degrees and continue baking for twenty-five to thirty minutes more, until the popovers are brown and firm.
Pierce the popovers with the tines of a fork before you remove them from the oven.
Butter them with the fresh herb butter made from the three remaining ingredients.
